On the mountain ranges overlooking the town of Dipilto, located in the Nueva Segovia region of Nicaragua, and close to the Honduras border lies the La Samaria farm where this micro-lot – the youngest of lots – La Montanita is sourced from. The farm is owned by Julio & Octavio Peralta. growing coffee has been the family business since the beginning of the 20’th century but it was only in 2008 that they started looking for ways to produce and market Specialty coffees. This micro-lot, planted exclusively with Caturra – a varietal of Arabica – produced only 540 Kgs of green exportable coffee. In order to get those 540 Kgs, 3500 Kgs of hand-picked coffee cherries where processed in a very meticulous Natural Process, where the coffee is dried for a total of 28 days – 22 days on raised beds outdoors and 6 days of final indoor drying. The cherries are continuously agitated in order to acheive a quick and even drying and are covered during mid-day heat and night-time cold in order to prevent any imperfections. The result is a very unique flavour profile including plumbs, strawberries & cream, soft lemonade with medium acidity and a heavy body
